Marshmallows
3 Envelopes of Knox Gelatin1/2 C Cold Water
2 C Granulated Sugar
2/3 C Corn Syrup
1/4 C Water
1/4 t Salt
1 T Flavoring or Liquor (Vanilla, Almond, Peppermint, etc.)
Powdered Sugar for coating
3. Turn on mixer to level 1 and pour boiling syrup into gelatin in a steady stream. Slowly increase the mixer speed from 1-10 over 5 minutes, then let mixer run at highest speed for 12 minutes.
4. While mixer is going, line the bottom of a pan with plastic wrap or waxed paper, and then spray with cooking spray. (9x13 pan for thinner marshmallows, 9x9 pan for thicker marshmallows)
5. At the end of 12 minutes, pour the marshmallow mixture into the pan and cover with a layer of powdered sugar.
6. Let sit for 2 or more hours.
7. Turn the marshmallows out onto a cutting board and remove the plastic. Cover the exposed side with powdered sugar.
8. Using a ruler, cut the marshmallows into 1x1 pieces or cut into any shape or size you like. Using the excess powdered sugar or a bowl partly filled with powdered sugar, dredge the marshmallows until all sides are coated and not sticky.
Pumpkin Bread
3 1/2 c flour
3 c. sugar
2 tsp baking soda
1 c. oil
1 1/2 tsp salt
4 eggs
1 tsp cinnamon
2/3 c. water
1 tsp nutmeg
2 c. pumpkin (1 can)
Mix dry ingredients. Add eggs and blend well. Add sugar, water, oil, and pumpkin. Blend well. Pour into greased loaf pans. Bake for 45 minutes to 1 hour at 325 degrees.
Whole Wheat Blueberrry Muffins
Hanky Panky Sandwiches
1 lb hamburger meat
1 lb sausage
1 lb velveeta cheese
onion powder
garlic powder
rye bread
butter
Brown meat and drain. Melt in velveeta cheese and add onion powder and garlic powder to taste. Spread meat mixture in between two pieces of rye bread. Brush bread with a mixture of melted butter and garlic powder. Bake until bread is toasted.
Yogurt Pie
Chicken Nuggets
1 lb boneless skinless chicken breasts
1/2 stick of melted butter
1 1/2 cups breadcrumbs
1/2 cup grated parmesan cheese
1 clove of garlic (more or less to taste)
salt and pepper to taste
Cut chicken into strips. Combine breadcrumbs, parmesan, and spices together. Dip the chicken pieces into the butter. Lightly press each piece into the breadcrumb mixture, coating all sides of the chicken evenly. Lay chicken onto a greased baking sheet. Cook at 400 degrees until chicken is golden brown and fully cooked (about 15-20 minutes).
"Crusty" Lasagna
1/2 lb. mild sausage
1/2 lb. ground beef (or turkey)
3/4 cup chopped onion
1/2 clove minced garlic
1 T. parsley flakes
1/2 tsp. basil
1/2 tsp. oregano
1/2 tsp. salt
dash of pepper
1 6-oz. can tomato paste
1 cup cottage cheese
1 egg
1/4 cup Parmesan cheese
2 cans crescent rolls
slices of mozzarella cheese
1 T. milk
Brown meats in skillet. Drain and add onion, garlic, parsley, basil, oregano, salt, pepper, and tomato paste. Simmer 20 minutes. In separate bowl, mix cottage cheese, egg, and parmesan. Unroll 1 can of crescent rolls (do not separate). Place on greased baking sheet. Spread 1/2 of meat mixture over the rectangle of rolls to about 1/2 inch from edge of dough. Pour cheese filling on top. Spread the rest of the meat over the cheese filling. Cover with mozzarella slices. Cover with the second can of crescent rolls. Press edges together to seal. Brush top with milk. Bake at 375 degrees for 20-30 minutes until golden brown.
Christmas Sugar Cookies:
1 cup butter
1 tsp salt
2 cups sugar
2 eggs
1 tsp baking soda
5 cups flour
2 tsp vanilla or almond flavoring
Cream butter and salt. Gradually add sugar until light and fluffy. Add in eggs 1 at a time, mixing well after each. Sift flour and baking soda together. Gradually add dry mixture, mixing well. Add flavoring. The mixture will be crumbly. Combine by hand into a ball and roll out onto wax paper. Using cookie cutters, cut into desired shapes. Bake at 350-400 degrees 7-10 minutes. Let cool. Decorate cookies with icing and sprinkles!
